I'm always looking for quick lunches that cut out the sandwich bread (but I do love a good sandwich... mmm), and I'm not afraid of fat (it's good for you, I promise). So tuna salad, egg salad and chicken salad are daily staples for me, but normally I'm boring and just wrap them in lettuce. Not today!
Tuna salad-stuffed tomatoes are a super easy low carb lunch. Here's how to do it:
Ingredients
- 1 can tuna, drained
- 2 tbsp light mayonnaise
- 1 good ol' fashioned squirt of yellow mustard
- 2 Roma tomatoes
- Celery salt and black pepper to taste
- Mix all but tomatoes in a bowl. Tough, huh?
- Hollow tomatoes out by cutting carefully into the top in a circle. Pull the middle out and don't waste! Add it to spaghetti sauce or salsa.
- Shove some tuna salad in there.
- Garnish with cilantro and a few pieces of diced red onion.
