Low-Carb Lunch: Tuna Salad-Stuffed Tomatoes

I'm health conscious, and I've found one of the easiest ways to see quick results is to cut carbs. Some studies suggest women's bodies are actually more apt to convert carbs to fat than men's bodies. AWESOME!

I'm always looking for quick lunches that cut out the sandwich bread (but I do love a good sandwich... mmm), and I'm not afraid of fat (it's good for you, I promise). So tuna salad, egg salad and chicken salad are daily staples for me, but normally I'm boring and just wrap them in lettuce. Not today!




Tuna salad-stuffed tomatoes are a super easy low carb lunch. Here's how to do it:

Ingredients


  • 1 can tuna, drained
  • 2 tbsp light mayonnaise
  • 1 good ol' fashioned squirt of yellow mustard
  • 2 Roma tomatoes
  • Celery salt and black pepper to taste
  1. Mix all but tomatoes in a bowl. Tough, huh?
  2. Hollow tomatoes out by cutting carefully into the top in a circle. Pull the middle out and don't waste! Add it to spaghetti sauce or salsa.
  3. Shove some tuna salad in there.
  4. Garnish with cilantro and a few pieces of diced red onion.
Super easy - super yummy!
